Summertime brings an abundance of fruits and vegetables in home and community gardens, at roadside stands and at farmers markets across the county. Canning is a great way to preserve the abundance of the harvest to enjoy throughout the year. These food preservation classes will provide participants with an in-person, hands on opportunity to learn how to safely can using the Hot  Water Bath processing method. Each class cost $10, all supplies will be provided. Classes are held at the N.C. Cooperative Extension, Henderson County Center, 100 Jackson Park Rd, Hendersonville, NC, 28792.

Blueberry Jam /  Tuesday, July 18 / 5:30-7:30 p.m.

Learn how to make blueberry jam using powdered pectin. The principles for making jam carry forward in almost all jam recipes so once you learn this once, you’ll be able to make many other jams!

Squash Relish / Wednesday, August 9 / 5:30-7:30 p.m.

When you’re up to your ears in zucchini and your neighbors have even stopped accepting your donations, this relish is a great way to use those zucchini.

Pickled Dilly Beans / Friday, August 25 / 5:30-7:30 p.m.

Green beans are abundant in summer gardens, and because they are a low acid food they require pressure canning to be safely preserved. However, if you properly pickle the beans first, you can preserve them using a hot water bath method. We will learn the hot water bath method in this class.

*NEW* Salsa / Tuesday, August 29 / 5:30-7:30 p.m.

We will prepare a vegetable salsa and process it in a water bath canner. I will also share other methods for preserving tomatoes and tested recipes to do so. This class was recently added due to high interest, it will be the same salsa recipe in both classes.

Reserve your seat today by completing the class registration via this Google Form and payment. We are accepting cash and check payments. Make checks payable to NCCE. Checks and cash payments can be mailed or dropped off N.C. Cooperative Extension – Henderson County Center, 100 Jackson Park Rd, Hendersonville, NC, 28792. We are open from Monday-Friday 8:30 a.m.-5 p.m.

Class size is limited and full registration, including payment, is required to hold your spot. If you do not make payment 5 days prior to the date of the class, you will be removed from registration. Participants under the age of 18 must be accompanied by an adult. If you have any further questions, please call our office at 828-697-4891.
